Could someone advise what role SNMP plays for BarTender 2016?
Our security team have requested SNMP is disabled on all printers, but when SNMP is disabled BarTender is unable to print, is this expected behaviour?
We have also bee advised if SNMP is required, we should change the the community name. If we do need to take this approach, is there a global setting within BarTender?

This is indeed uncommon behavior. As per default, the SNMP Status is disabled, and BarTender would not need to use it to function as expected:
Perhaps it would be best if you opened a ticket with us, as we would need to go a little in-depth into your setup, environment, and logs in order to find what the issue is. Without those, troubleshooting wouldn't be a viable option.0
Switching SNMP off on both the printer and server (under ports) BarTender is able to print.
