It sounds like you need to write back the last number printed to the database to be read back in the next time you print that product. Check out the Actions in either the Data Entry Form properties (if you use one) or the BarTender Document Options screens as there is a Update Database Record option in there

To print when a new record is added to the database? In which case you will need to look at Integration Builder and a Database Integration that looks at the appropriate field in the database and when it is populated it will print the label for that record
