How do I downgrade from BarTender Designer 30 day trial to Ultralite so I can still print basic barcodes.

The Ultralites were printer manufacturer specific and will only work with that manufacturers printer models. I am also not sure if they are still available, and so you would need to contact them to see if they still have these that they can supply to you for your device, I know they used to ship with certain printers etc. and weren't available via Seagull themselves.
If you do find a copy you may need to redesign any test labels you have created as they could contain features that are not available in the reduced spec Ultralite version
